The drying of persimmons is in full swing in the northern region of Fukushima Prefecture, northeastern Japan. The regional specialty known as anpo-gaki has a bright orange color, thick texture and rich sweetness. Shishido Satoshi is a farmer in Date City, thought to be the birthplace of anpo-gaki. His workshop produces up to 2,000 semi-dried persimmons a day. The fruit is peeled by machine and hung on ropes, with 20 persimmons per rope. Then they are fumigated with sulfur for about half an hour to preserve the vibrant color. The drying process takes about a month. Shipments will begin around mid-December. Shishido expects to ship 20,000 to 30,000 pieces this season, about the same level as usual. Shishido says anpo-gaki is characterized by its natural sweetness and that nothing artificial is used in its production. He hopes many people will enjoy the dried persimmons.
